Nouvelle cuisine
Basque nouvelle cuisine started in the 1970’s following the initiative
of a group of young chefs, willing to develop and expand traditional recipes.
Initially highly influenced by French nouvelle cuisine, it has since achieved
a high level of sophistication and innovation, through a perfect marriage of
French high cuisine and Basque traditional cooking. New ingredients and aromas,
new methods and new combinations make for a highly creative and exquisite cuisine,
that proudly boasts several world renowned chefs amongst its ranks.
